HOBO SOUP
1 med. chopped onion
1 1/2 lb. ground beef
1 (28 oz.) can tomatoes
2 cans beef consomme
2 soup cans water
4 carrots, chopped or sticks
4 celery tops, chopped or sticks
1/2 c. barley
10 pepper corns
1 1/2 tsp. thyme
1 tsp. salt
Parsley to taste
Saute onions in butter. Brown hamburger, drain grease. Add all together in kettle and cook for about 1 1/2 to 2 hours.
HOBO GOULASH
1 1/2 lbs. hamburger
Tater tots
Onions
1 can mushroom soup
Shredded cheese
Green beans, optional
Fry hamburger and onions; drain. Pour into cake pan (9x13). Layer tater tots, cheese, mushrooms on top. Pour mushroom soup (mix as directed on can) over ingredients and bake for 1 1/2 hours at 350 degrees.
HOBO HAMBURGERS
Hamburger patties, browned
1 onion, diced
Potatoes, diced
Carrots, diced
1 can cream of mushroom soup
1/2 can (see above) milk
Place each hamburger on square of foil. Cover each patty with diced onions, potatoes and carrots. Mix soup and milk. Put about 5 tablespoons of mixture over each patty with vegetables. Seal foil into pouches. Place on baking sheet and bake in 350 degree oven for 1 hour.
